Gastro Kanton Zürich betreibt als verbandseigene Institution das Bildungszentrum für gastgewerbliche Aus- und Weiterbildung in Zürich. Gastro Kanton Zürich wird nach den Grundsätzen einer «Corporate Governance», namentlich Transparenz, Partizipation und Gewaltenteilung geführt und achtet auf den wirksamen Einsatz der Mitgliederbeiträge.
